Tiger nuts are a great way to start the day as they are high in fibre, making them really  filling and keeping you feeling full for longer, and because they are a great source of pre-biotic fibre which helps feed your intestinal gut flora they will give your gut a healthy boost too. This sunny citrus breakfast was so delicious and kept me feeling super fuelled until the afternoon.  A boiled egg, avocado, radish and pea shoot salad topped with our super soft peeled tiger nuts and dressed with a little satsuma juice and Himalayan salt. Eating nutritious and delicious whole foods is good for your body, and eating pretty food is good for the soul!   I really loved eating this sunny breakfast plate in my garden in the sun in our newly arrived spring sunshine, off my lovely new plate!

Hi, you can buy the flour direct fromus, or if you really want to you could try processing it in a very tough food processor!
