I am so excited about this simple recipe ! It’s a delicious, sweet yet super healthy low calorie treat.

All you need are a few ingredients, but you will need a masticating juicer with a grinder screen or function. I used a Matstone juicer, but make sure you don’t use the juicing screen or a centrifugal juicer as it may break.

All you need is ;

Frozen fruit – I used banana and mango.

Chopped tiger nuts – I used premium peeled.

A few coconut flakes.

Chia seeds, corn flower petals to decorate.

Simply place the fruit into the juicer using the grinding screen and turn on (see link here if you are not sure what a grinder screen is http://www.juiceproducer.com/matstone-samson-6-in-1-juicer-spares-and-parts-c16)

Then sprinkle with chopped tiger nuts, chia seeds, coconut flakes, petals and anything else that takes your fancy. The chia seeds and tiger nuts add crunchiness, whilst the coconut adds a tropical twist. Using banana will give a creamy texture. I also tried a version using Tiger Nut flour instead of chopped nuts, which worked just as well but with less crunch. Using fruits such as strawberries or melon would give more of a sorbet texture.

 

The fun part is that the ice cream comes out in a long tube shape depending on the nozzle you use. It reminds me of a 1970’s play doh shape maker!

You could swirl it into an ice cream cone like a Mr.Whippy before sprinkling with nuts and chia seeds. The best thing is that this delicious treat is high in potassium from the banana and tiger nuts, and only around 100 calories per portion.
