These bounty bites are so amazing! They taste so much like those famous chocolate and coconut bars, but this version is sugar free and healthy! Ingredients

Base
100g gluten free oats
100g milled tiger nuts (if you are avoiding nuts) or ground almonds
1 tbsp cacao powder
2 tbsp coconut oil
3 tbsp pure maple syrup
3 tbsp coconut milk

Coconut layer
300g dessicated coconut
4 tbsp coconut milk
2 tbsp coconut oil
3 tbsp pure maple syrup

Chocolate layer
1/4 cup coconut oil
4 tbsp cacao powder
3 tbsp pure maple syrup

To make

Line a square cake tin with baking powder. Blend oats until it becomes rough flour.  Add the rest of the ingredients and process, press firmly into the cake tin and refrigerate. Rinses the blender/processor add all the coconut layer ingredients and blend until relatively smooth. Taste and then adjust sweetness if necessary.  Press on top of base layer and freeze. Gently melt the coconut oil and whisk in the rest of the ingredients, pour over coconut rotating the tin so it gets in all the corners. Place back into the fridge or freezer. Cut into small squares and enjoy!
