This month the lovely Eva Mauleon of Eva Health has been busy trying our Tiger Nuts and  looking at the nutritional benefits of Tiger Nuts and horchata or Tiger Nut milk.  Eva is originally from Spain and understands the benefits of a mediterranean diet. Her blog  has lots of easy to make healthy recipes, and this week she has featured our Creamy Horchata recipe . Eva is a registered nutritional therapist who specialises in working with  digestive issues,  food intolerances, healthy eating, sports and women’s nutrition and weight management and we were excited to find her here on our doorstep in Brentwood.

Eva came along to our Tiger Nut Tasters workshop and has become a huge fan of our tiger nuts. On her blog she highlights the health benefits of horchata which is rich in minerals and vitamins, especially in calcium, iron, phosphorous, potassium and vitamins C and E. Eva also explains that Tiger nuts are a nutrient dense resistant starch; Resistant starch is a type of starch that is not digested in the stomach or small intestine, reaching the colon intact – it “resists” digestion. Eva explains that this is  why we do not see spikes in either blood glucose or insulin after eating RS, and why we do not obtain significant calories from RS.  Resistant starch stimulates the good bacteria in our intestines, helping to maintain a healthy balance of bacteria. This makes tiger nut milk ideal for people with diabetes, or those who are struggling with blood sugar issues.  Most of all though we still think that one of the main benefits of tiger nut is that it is delicious!
