What better way to start the morning than with waffles, and even better when they are totally sugar free, gluten free and and healthy! These are delicious and every bit as good as chocolate waffles and perfect for anyone who is avoiding chocolate, or you can use cacao powder if you prefer a real chocolate hit . A simple recipe, high fibre and no added sugar, so go ahead and have a go, they are ready in 10 minutes.

INGREDIENTS:

-1 cup of tiger nut flour
-4 eggs
-1/3 cup of carob powder (or raw cacao powder)
-1 tablespoon of cinnamon
-1 teaspoon of lucuma powder
-1 spoonful of maca
-1 tablespoon of coconut flour
-½ cup of oat milk
PREPARATION
1. In a bowl combine all the dry ingredients.
2. In another bowl beat the eggs and add the oat milk.
3.Add the mixture of eggs and milk to the first bowl., and mix well so that lumps do not form.
4. Heat the waffle maker and grease it.
5. Add 1/3 cup of the mixture for each waffle, and heat until cooked.
