Isn’t this the just the cutest Christmas snowman?! We LOVE this Christmas creation by 7-year-old Maia – it is by far the best tiger nut snowman we have ever seen!

The recipe for this super snowman was created by Maia’s mum, Karinne a nutritional therapist from Happy Living Nutrition.  Such a lovely idea and such a simple and delicious recipe – and healthy too! We really love seeing all the delicious things you make with our tiger nuts, and this fun festive snowman has made our day and is definitely on our favourite recipe list!!

Edible Snowman Recipe

(No bake, V, GF).

An easy, healthy Christmas treat. Blitz all the ingredients and shape into balls.Roll in the desiccated coconut and let the children design their snowman ⛄️. I like to use tiger nut powder because they are naturally sweet and full of goodness.  To decorate, you could use raisins, dried apricots, carrot sticks, cocoa nibs, cake pop sticks (to hold together).  You might need to adjust the liquid slightly depending on how dry the nut butter is. 🎄

Ingredients:
-50g tiger nut powder
-100g desiccated coconut
-5 tbsp ground almond
-4 tbsp tiger nut milk – or any alternative milk
-2 tbsp nut butter
-1 ½ coconut oil
-1/2 tsp vanilla extract

Blitz all the ingredients in your food processor, and then get creative!
