This is a my favourite chia pudding recipe, so easy to do and it tastes really nice. I really love the unusual texture of chia pudding, it’s my new favourite discovery  this month. It is a bit like marmite though, you either love it or hate it, but for me chia pudding is a hit !

Soak 1/4 cup of chia seeds to 3/4 cup horchata (see recipe http://www.thetigernutcompany.co.uk/best-ever-creamy-horchata-recipe/) for around 6 hours or preferably overnight.

Then I topped it with lovely juicy fat blueberries, cornflower petals, some peeled Tiger Nuts Premium and sprinkled it with my other favourite discovery, cacao powder from the lovely Raw Chocolate Company (http://www.therawchocolatecompany.com/allan_html_pages_new/organic_superfoods.htm#cacao_powder_200).

It is surprisingly filling and I  think it makes a great change for breakfast or a healthy desert 🙂
