Blueberry Chia Pudding

This is a my favourite chia pudding recipe, so easy to do and it tastes really nice. I really love the unusual texture of chia pudding, it’s my new favourite discovery  this month. It is a bit like marmite though, you either love it or hate it, but for me chia pudding is a hit !

Soak 1/4 cup of chia seeds to 3/4 cup horchata (see recipe for around 6 hours or preferably overnight.

Then I topped it with lovely juicy fat blueberries, cornflower petals, some peeled Tiger Nuts Premium and sprinkled it with my other favourite discovery, cacao powder from the lovely Raw Chocolate Company (

It is surprisingly filling and I  think it makes a great change for breakfast or a healthy desert 🙂
