We get so excited to see what amazing creations you make with our tiger nuts, and this cake recipe is one of the most amazing we have seen! It is created by Em, a blogger from Slovakia living  in London who writes about her journey, lifestyle and nutrition on her blog myredcarpetbody.

She loves our tiger nuts and makes  some of the most beautiful tiger nut creations we have seen! You will find more of her yummy creations here on Instagram, and  Em has kindly given us this recipe to share here with you all.

We love this because although it looks divinely decadent it is healthy, gluten free, vegan  and low sugar, and it is super easy to make!

RECIPE:
1/2 cup of rice flour @dovesfarm
1/2 cup of tiger nut flour 
1/2 cup of raw cacao powder @naturya
2 tsp of aluminium free baking powder
1 tsp of aluminium free bicarbonate of soda
1 tsp of Himalayan salt @steenbergsltd
1/2 cup of freshly made thick and creamy macadamia milk
1/2 cup of strong coffee made with 2 heaped tbs of coffee
1 tbs of fresh dry coffee grounds
1/3 cup of flax seeds grounds
1/3 cup of unrefined rapeseed oil @mr_organic
1 Tbs of apple cider vinegar @clearspringuk
3 tsp of vanilla extract
1/2 cup of erythritol @nkdliving
1/2 cup of coconut sugar @bionaorganic – you can add extra Tbs of each sweetener if you want to have a sweater cake 🙂

Blend everything together, place in a round cake mould, lined with parchment paper greased with coconut oil and sprinkled with ground almonds. Then bake in the oven preheated to 180 degrees C for about 40 minutes.  Leave to cool, then decorate with cake with your favourite chocolate spread or nut butter.
